Here’s what you’ll need to make Attica’s kinfolk potato salad:
5 pounds red potatoes, diced
1/2 cup diced onion
1/2 cup diced celery
1/2 cup diced green pepper
1/4 cup chopped fresh parsley
1/4 cup chopped fresh thyme
1 tablespoon salt
1 teaspoon black pepper
1 1/2 cups mayonnaise
1/4 cup Dijon mustard
1/4 cup vinegar
Instructions:
In a large pot, boil potatoes in salted water until tender. Drain and let cool.
In a large bowl, mix together potatoes, onion, celery, green pepper, parsley, thyme, salt and black pepper.
In a small bowl, whisk together mayonnaise, mustard and vinegar. Add to potato mixture and stir until evenly mixed.
Cover and refrigerate for at least 2 hours (or overnight) before serving.
