Asparagus salad with kiwi mayonnaise

Parsnips are the number one delicacy of spring. The asparagus salad gets a fresh accompaniment in the form of kiwi mayonnaise, which adds a touch of freshness to the dish. A real health food!
Ingredients for four
8 green asparagus 1 cucumber 1 crisp lettuce, e.g. 1 ripe kiwi fruit 1 dl mayonnaise
Mayonnaise
1 ripe kiwi fruit 1 dl mayonnaise
Make the mayonnaise, peel the kiwi and blend with a hand blender until smooth. Rinse the salad and leave to dry.
Thinly peel the asparagus with a paring knife. Cut into one-inch chunks and bring to a rapid boil, about 2 minutes. Place the asparagus in cold water and leave to dry for a moment, then place on kitchen paper to dry.
Peel the cucumbers, cut off the seed part and chop.
Place the asparagus salad in a serving dish and place your kiwi mayonnaise in a separate cup on a serving platter for everyone to take away.
The asparagus salad is ready to serve.
