Asian Fish Rolls

Nontraditionally prepared fish in the Asian way. The preparation is a bit more challenging, but if the work is successful, the rolls are great!

Ingredients:

The batch shown makes 16 rolls – for 4 people: 500 g of cod fillets 250 g cooked rice 2 pcs star anise 1 pcs red flesh peppers 1 pcs leek 2 tbsp fish sauce 1 tbsp grated ginger 1 tbsp chopped parsley or cilantro sea salt chilli oil 16 pieces rice paper For the sauce: 2 tbsp soy sauce 2 tablespoons water 1 tablespoon chopped parsley 1 tablespoon chopped parsley 1 tbsp oil 2 pcs garlic cloves lemon juice to taste

Procedure:

Pour 2 cm of water into a large pot, add star anise, ½ tablespoon of grated ginger to the water, place a steamer in the pot, place the fish fillets skin side down on the steamer, season with sea salt, cover the pot with a lid, steam over low heat for 10 minutes

.Let the finished fish cool, remove the skin, break the meat into chips, remove the bones if necessary, set the meat aside

Simmer the sliced leeks in a pan in oil, strip the peppers, let cool

Pour the cooked rice into the bowl, add the steamed Vegetable Recipes, fish meat, chopped parsley, mix the mixture, season with fish sauce, chilli, ginger, salt

Place the rice paper on a wet tea towel, when it is soft, pile the mixture in the middle, fold the edges of the paper, form rectangular packets

Spread the rice paper on a wet tea towelPlace the baking paper on a baking tray, stack the packets, fold the edges down onto the tray, brush with oil, place in a preheated oven, bake for 10-12 minutes until the paper starts to turn golden on the surface

Place the baked rolls on a plate and top with the sauce made from the above ingredients (mix water with soy sauce, lemon juice, oil and add chopped garlic and parsley with a fork).

Recommendation:

The rolls can also be fried in a higher layer of oil in a deep fryer. Kimchi (kimchi), a fermented vegetable, is served with the rolls.

Note:
