Apple pancakes

2 cups plain flour 1/2 cup granulated sugar 1 tsp ground cinnamon 1 pinch salt 3 cups milk 2 pcs egg yolk 2 pcs egg white 1 cup finely grated apple
For topping:
5 tbsp granulated sugar 1 tbsp butter 1 pk apple

Very easy to make, no yeast or baking powder, yet light and fluffy.

Mix flour, sugar, cinnamon and salt. Whisk the egg yolks in the milk, pour over the flour and knead into a smooth, thinner dough.

Add the finely grated apples and mix.

Finally, add the two egg whites. Bake in a dolcara or pan in a drop of oil on both sides until golden.

For the topping, prepare the caramel with the apple pieces. Put about 5 tablespoons of granulated sugar in a pan and let it melt-caramelize without stirring, add a knob of butter, let it melt and then add the apple cut into small pieces. Reheat and can be poured over the baked pancakes.
