Amsterdam Zucchini

Cupcakes filled with a mixture of tomatoes, hard cheese and herbs, wrapped in foil and baked on the grill or in the oven.

Procedure:
1. Clean the zucchini and cut each zucchini in half lengthwise, carefully hollow out some of the pith
2. Boil the hollowed-out zucchini briefly in salted water for about 4 to 5 minutes, remove them and rinse with cold water
3. Cut the cheese and the tomato into cubes and mix with the zucchini, corn and chopped herbs
5. Season the mixture with salt and pepper
6. Fill the prepared stuffing with the zucchini halves, wrap each separately in foil and grill for about 15 to 20 minutes on the grill grate or in the oven.
Recommendation:
Serve various yoghurt toppings and boiled potatoes, or just fresh bread, as a side dish for the zucchini prepared in this way.
