Always ordered at the cinema, this is a treat that’s now easy to make yourself. Blueberry pancakes!
n. 2 eggs 2 tbsp butter 1 dl blueberries (frozen) 1 dl maple syrup
Separate the whites and yolks. Whisk the whites and sugar until stiff peaks form. Mix the yolks and other ingredients together. Add flour to taste; the dough should be considerably thicker than that made with Finnish lettuce.
Leave the dough to rise for 15 minutes.Then gently add the whipped cream to the dough.
Pan in a medium pan with a generous dollop of butter. Slowly spread the batter in the middle of the pan (a blini pan is the best). American pancakes do not need to be very large in diameter, as they are made thicker in a completely different way than Finnish pancakes. Cook when the pancake has coagulated.
*If you have fresh blueberries, you can drop a few into the pancake while it’s cooking. Frozen blueberries are so thin that you can’t fry them and they get messy. Tried and tested.
Stack pancakes and line them with blueberries and maple syrup. American pancakes make a delicious stacked meal.
