Amazing lamb ribs on garlic and oregano,

I make lamb dishes at home quite often. One of our favorite ways to make it is this one. The meat is amazingly tender, soft and flavorful
1.
Tenderly trim the lamb ribs on the outside to make the top nicer. I cut the purely meaty part off the bottom and cut it into 3 more parts to fit in the baking dish Then salt everything well, sprinkle with oregano and place on a dry baking dish. Divide the thinly sliced garlic into 2 parts, sprinkle one part under the meat in the baking dish and the other part on top of the meat. Put the meat in a preheated oven at 180°C and leave it there until it is done baking.

When the meat has visibly started to bake and the skin is showing, take it out, pour boiling water over it and cover it well with foil. Then make a notch in the foil on the two shorter sides, so that the meat not only cooks/stews, but at the same time it also cooks a little bit all the time from the top side Finally, put the baking dish back in the oven and bake at 180°C for about 1.5 hours.

After some time, take the meat out, take the foil off, turn the meat around and put it back in the oven for about 20 minutes to get a nice golden roast

The meat is wonderfully tender and very good tasting The lamb meat has an excellent taste on its own, but combined with garlic and oregano it is simply a fantastic delicacy Serve it according to taste with bread, potatoes, etc. Enjoy!
