Aloo Palak – spinach potatoes

Vitamin-packed curry with potatoes and spinach. Frozen spinach is nice too, as we so rarely get fresh.
Ingredients for four
1 ps frozen spinach (fresh is fine, of course;3 large pots 1 large onion 4 cloves of garlic 1 pinch of ginger 1-5 chillies1 tbsp butter 2 tbsp butter 1 tbsp garam masala 1 tsp turmeric 1 tbsp coriander powder 1 tbsp jeera 1 tsp salt

Peel and dice the potato. Put the potatoes in a saucepan (with salt) and boil for five minutes. Remove the pot from the heat but the potatoes can be jäädä in the water.
Making the masala:
Peel and finely chop the onions. Add butter and oil to pan with onions. Peel myös ginger and chop it in the pan. Slice the chillies and place in the pan. When the onions start to brown, sprinkle the spices on top. Stir in the masala until smooth. You can add more oil if it gets too sticky.
Dip the frozen spinach in the pan as is, with a little water. Thaw the spinach in the masala (fresh spinach after rinsing, put it in the pan as it is).
Drain the potatoes and put them in the pan. Stir the Aloo Palak well and check that the potatoes are cooked. Fry for another minute if necessary. Serve and garnish with Aloo Palak yoghurt and coriander leaves.
