procedure
1. Preheat the oven to 200°C. Wash and dry the Vegetable Recipes and place them on a baking tray lined with baking paper. Bake until the skin is blackened. 2. Remove them from the oven, place them in a plastic bag to steam and remove the skin. Cut the tomatoes crosswise and bake them. 3. Peel the aubergines and peppers and remove the skin and seeds. Grind everything in a meat grinder. Slowly fry the finely chopped onion and garlic cloves in olive oil. Add the minced Vegetable Recipes, pass the tomatoes through a sieve to remove the skin and seeds. 4. Season the Vegetable Recipes lightly with salt, pepper and chilli. Add the sunflower oil and cook over medium heat for about 90 minutes. The mixture should be free of excess water. At the end, season with salt, pepper and sugar as needed. 5. Fill the jars with ajvar, pour a little oil over them, seal and sterilise.
