The pandemic that led us to have to confine ourselves to Spain a year ago has plunged us into a new normal in which we are limited when it comes to getting together with other people to celebrate, but instead of complaining and suffering, it is good to continue taking advantage of every occasion to celebrate whatever it is, even if now there are not many of us at the table and the laughter and congratulations can only be shared by video call.
And what better way to celebrate than with a special dessert, a sweet recipe that we can prepare without complications and that always turns out well. It is true that pastries leave less room for improvisation than savory recipes, but that is not a disadvantage, but should be seen as an advantage, because if you follow the recipe to the letter, success is assured.
During the confinement, almost all of us learned new recipes for cakes, so now we will go a step further and learn recipes for easy cakes of all kinds, some very fast that are made in microwave, others that do not need oven because they are prepared cold, so that you only have to choose the one you like to get down to work.

Pear Bourdaloue tart with red wine sauce
The Bourdaloue is a classic tart of French cuisine that consisted of a sablée dough filled with almond cream, pears in syrup and sprinkled with crushed macarons.
We propose a modern version of Bourdaloue using frangipane cream, which is the result of the union of pastry cream and almond flour traditionally used in desserts such as Galette de rois (something like the French Roscón de Reyes), and decorating with flaked almonds and powdered sugar.
As an accompaniment, we will flee from the classic ice cream or crème anglaise and opt for a red wine sauce that will give us a different touch and full of contrasts.
